Sauternes and Foie Gras
Drinking Sauternes with Foie Gras is a big tradition in France, especially at Christmas time. Outside of France it’s sometimes a little bit more controversial, but production continues to grow with both Israel and the US becoming large producers.
Having tasted a lot of salty and spicy food alongside Sauternes recently, it was interesting to go back to trying something very rich with it instead.
I tested first with Chateau La Tour Blanche, which is a very rich, sweet wine, some would say more of a traditional pudding wine. I then followed it with some Sigalas Rabaud, which has a slightly finer and more pointed style.
